Matriark Makes Surplus Sustainable for a Food System Solution
Georgia Wray Norsten — January 11, 2025Matriark is turning surplus farm vegetables and fresh-cut remnants into nutritious, low-sodium products like broths and bases, revolutionizing waste reduction in foodservice sectors such as schools, hospitals, and food banks. Each carton of 'Matriark’s Upcycled Vegetable Broth Concentrate' saves 102 gallons of water and prevents nearly a pound of waste from entering landfills.
Expanding its impact, Matriark introduced upcycled tomato-based pasta sauces in 2023 and recently launched a meal for food banks made entirely from surplus farm produce. As a founding member of the Upcycled Food Association, the company champions global upcycling practices to create a sustainable and equitable food system.
